Tomatoe Sauce with Courgette and Aubergine – Recipe

Pasta with courgette and aubergine is a delicious vegetarian main course, great to be enjoyed in summer when aubergine and courgette are in season. A tasty option is to add a sprinkling of grated cheese, but this dish is just a rich and full flavoured without, for those who are vegan or dairy free.

Ingredients for 4 people:

  • 4 tomatoes
  • 200 grams of tomato puree
  • 1 eggplant, finely cut
  • 1 courgette, finely cut
  • 2 cloves of garlic, finely cut
  • Oregano, thyme and Italian herb mix to taste


How to make:

  • With oil, fry the garlic, eggplant, courgette, tomatoes and the herbs for approx. 10 minutes
  • Add tomato puree
  • Place the lid on the pan and let it softly cook for another 20 minutes
  • Blend the sauce a little bit, if necessary
  • Serve with pasta and a salad



We suggest a salad made of tomatoes, lettuce and carrots. As salad dressing you can use olive oil, a bit of lemon juice and salt.
